Ingredients

100ml Fortini Smoothie Multi Fibre Berry Fruit flavour
100ml Fortini 1.0 Multi Fibre Banana flavour
2 eggs
1 small banana mashed
2 tsp baking powder
150g rolled oats
Oil for frying
Yogurt and fresh fruit to serve

Method

  1. In a blender add Fortini Smoothie Multi Fibre Berry Fruit, Fortini 1.0 Multi Fibre Banana, eggs, banana, oats and baking powder. Process until mixture is smooth, scrape down sides and continue to process until mixture is fully blended and smooth.
  2. In a large frying pan, add a small amount of oil and place over low/ medium heat.
  3. Add 2-3 tablespoons of the mixture into the pan in a circular shape. Cook for a few minutes until bubbles appear and underside is mostly golden. Flip and cook other side until golden brown.**
  4. Repeat until all the mixture has been used (you can make small or large pancakes).
  5. Serve hot or allow to cool, once cooled you can wrap in plastic wrap and freeze until needed.
  6. To serve top with yogurt and fresh fruit.

Chef's tips:

  • You can use any flavour of Fortini Smoothie Multi Fibre and Fortini 1.0 Multi Fibre in this recipe.
  • Great to make in advance for breakfast or dessert, served hot with ice cream.
  • You can batch make these pancakes and keep frozen for 3 months.
  • You can add up to 50g of mixed dried fruit e.g. raisins, sultanas, cranberries, chopped apricots, into the pancake batter before cooking.

**Do not cook Fortini Compact Multi Fibre at high heat as it may destroy the vitamin and mineral content of the product. Always test the temperature of the food before serving.
