Ingredients

  • 200ml Fortisip PlantBased 2kcal Tropical flavour
  • 125g self-raising flour
  • ½ tsp baking powder
  • 2 tsp maple syrup
  • 2 tsp desiccated coconut
  • Oil for frying

To serve:

  • Fresh mango and/or banana
  • Maple syrup

Method

  1. In a bowl, whisk the self-raising flour, baking powder, and desiccated coconut together. Whisk in the Fortisip and maplesyrup until you have a thick smooth pancake batter.
  2. Heat a little oil over medium heat in a frying pan, spoon in the pancake batter and allow to cook for a few minutes on each side until golden.
  3. Place on a serving plate and top with the sliced fresh fruit. Drizzle over maple syrup to taste.

Chef's tips:

  • You can batch make the pancakes and freeze for up to 3 months until needed. To re-heat place in a toaster until warm.
  • If you don’t like desiccated coconut, add the zest of an orange or lemon, or 1 tsp vanilla extract.
  • Top the hot pancakes with vegan butter and a dusting of icing sugar.
  • The pancakes can be eaten cold, spread with jam or maple syrup for a quick snack.
