35g rocket leaves
Handful cherry tomatoes, halved
1/4 red onion, sliced
1 roasted red pepper, sliced (from a jar)
1/2 yellow pepper, thinly sliced
3 radishes, thinly sliced
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
15g / 1 tbsp roasted red pepper & chilli hummus


  1. Combine all of the ingredients and assemble the salad.
  2. Drizzle with olive oil and balsamic vinegar.
  3. Serve with your low protein Roasted Red Pepper and Chilli Hummus.

Chef's Tips:

For some added crunch and flavour, sprinkle over some crushed Loprofin Herb Crackers.
