Ingredients
35g rocket leaves
Handful cherry tomatoes, halved
1/4 red onion, sliced
1 roasted red pepper, sliced (from a jar)
1/2 yellow pepper, thinly sliced
3 radishes, thinly sliced
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
15g / 1 tbsp roasted red pepper & chilli hummus
Method
- Combine all of the ingredients and assemble the salad.
- Drizzle with olive oil and balsamic vinegar.
- Serve with your low protein Roasted Red Pepper and Chilli Hummus.
Chef's Tips:
For some added crunch and flavour, sprinkle over some crushed Loprofin Herb Crackers.
