Ingredients**

Mushroom pate
200g mushrooms 
25g dried porcini mushrooms 
50g small diced onions 
1 teaspoon garlic puree
salt & pepper 
100g low protein cream cheese 
25g butter 
mixed dried herbs 

Roasted red pepper salsa
150g chargrilled peppers (in a jar)
25g spring onions 
50g sundried chopped tomatoes
pinch of salt & pepper 
½ teaspoon smoked paprika  
25g olive oil 
fresh basil chopped 

Cheese and onion dip
200g red onions 
25g olive oil 
1 teaspoon garlic 
salt & pepper 
100g low protein cheese 
25g mayonnaise

Method

Mushroom pate

  1. Soak the dried mushrooms in boiling water for 30 minutes
  2. Grate the mushrooms on a box grater, then in a frying pan melt the butter, add the grated mushrooms, diced onions and fry for 5 minutes
  3. Next add the garlic, dried mushrooms (chopped) herbs and fry for another 5 minutes. The mixture should be dry. If there is moisture in the pan keep cooking until this evaporates and then allow the mixture to cool completely
  4. Once cooled, mix with the low protein cream cheese and season to taste
  5. Either leave the pate chunky or process until smooth

Roasted red pepper salsa

  1. Chop the peppers into small dices, slice the onions thinly and chop the tomatoes
  2. Mix the peppers, onions, and tomatoes in a bowl and season to taste with salt, pepper, and smoked paprika
  3. Lastly, add the oil and basil and stir to combine then allow the salsa to chill in the fridge for a few hours to develop the flavours

Cheese and onion dip

  1. Chop the onions into thick dices and place them in a roasting tray, then add the garlic and drizzle them with oil
  2. Roast the onions for 30 minutes in a 170oc oven until tender and the edges are golden, then allow to cool
  3. Add the cooled onions and low protein cheese to a processor and pulse a few times until everything is chopped up but not a puree
  4. Stir in the mayonnaise and season to taste with salt and pepper
  5. Place in a bowl and cover until needed

Chef tips:

  • The dips can be served with raw vegetables and crackers
  • You can stir them through cooked pasta for a salad
  • You can also use these dips as sandwich fillings or in low protein wraps
