  • 75g cooked Loprofin Rice
  • 2 spring onions 
  • 1 small carrot
  • 6 grapes
  • 2 mushrooms
  • 25g red pepper
  • 25g apple chips 
  • 1 tablespoon of apple juice
  • 2 tablespoons of olive oil
  • Salt and pepper 


  1. Chop the pepper, mushrooms, carrot, grapes and spring onions into bite-size pieces.
  2. In a bowl, add the apple juice and whisk in the olive oil, seasoning with salt and pepper to taste.
  3. Then add the chopped vegetables and the cooked Loprofin Rice to the bowl.
  4. Stir until everything is coated in the dressing, then add the apple chips.
  5. Serve straight away or leave in the fridge until needed.

Chef tips

  • You can keep this rice salad in the fridge for 3 days. 
  • You can add any fruits or vegetables to this salad to suit your own taste. 
  • Great for lunch boxes, buffets, and party’s.
  • You can also add low protein cheese to this salad (smoked cheddar is really nice in this salad).
