Method

  1. You will need a freezer safe box with a lid. Place the Fortisip, vanilla bean paste and condensed milk into the box and stir everything together. Place on the lid and freeze for 2 hours.
  2. After 2 hours, remove from the freezer. You will see the outside has started to freeze but the middle is still liquid. With a fork, mix the ice cream together (blend the outside into the middle), place the lid back on and freeze for another 2 hours.
  3. Repeat step 2 once more.
  4. To serve, scoop the ice cream into a bowl and top with ice cream sauce and fresh fruit.

Chef's tips:

  • Keep the ice cream in the freezer for up to 1 month.
  • Add dried mango and banana chips to add texture and flavour.
  • If you cannot find vegan condensed milk, you can use 100ml vegan double cream and 1 tablespoon of maple syrup.
